Here is what makes these pies so incredibly special. Our lobster is sourced from the icy waters of Penobscot Bay in Maine by Greenhead Lobster, a family-run business. Just before flash freezing the pot pies, we add the vegetables and lobster into the mix without cooking them - guaranteeing that your oven at home will be the first cooking and delivering tender, juicy lobster meat as well as bright, freshly cooked vegetables.
When it comes to Boeuf Bourguignon, the key is starting with the best meat available. Our brisket and chuck come from Reliable Brothers, a local butcher specializing in high-quality meats since 1935. Following the traditional preparations of the French dish, our additions are simple: red wine, house made beef stock, carrots, crimini mushrooms, pearl onions, fingerling potatoes and herbs. The secret to the tender meat and rich sauce is the slow-braising process. These pies take us two days to make and are well worth every minute.
